Technique: Flouring Chicken
 Many chicken recipes call for coating the chicken pieces with flour before sauteing in order to create a nice browned crust. Here's an easy, mess-free way to coat your chicken pieces with flour:
1. Place about 1/2 cup of flour in a clean brown paper bag and add salt and pepper if you like.
2. Add two or three pieces of chicken to the bag, fold the top shut and shake a few times to coat the pieces thoroughly. Remove the pieces from the bag, shaking each slightly to remove excess flour. Repeat with the remaining chicken.
Note: You should brown the chicken as soon as possible after flouring the pieces so the flour doesn't become soggy.
