Potatoes au Gratin

2 pounds Yukon Gold potatoes, peeled 8 green onions, finely chopped 3/4 cup milk 1/2 cup half-and-half 2 sprigs fresh thyme 1 clove garlic, crushed 1/2 teaspoon salt 1/2 teaspoon black pepper Pinch of ground nutmeg 1 cup grated Cheddar cheese
Cheddar cheese and Yukon Gold potatoes are an irresistible combination. Here, they pair with green onions for a mouthwatering side dish.
1. Preheat the oven to 375F. Lightly spray a 2 1/2-quart shallow baking dish with cooking spray.
2. Grate the potatoes and place in a large bowl. Add the green onions and toss to combine. Transfer to the prepared dish.
3. Combine the milk, half-and-half, thyme, garlic, salt, pepper and nutmeg in a medium saucepan. Bring to a simmer over medium heat. Remove from the heat and pour through a strainer over the potato mixture. Sprinkle the Cheddar on top.
4. Cover the dish with foil and bake for 35 minutes. Remove the foil and bake until the potatoes are tender when pierced with a knife and golden on top, about 15 minutes longer.
Tip Use waxy potatoes, such as Yukon Gold or red potatoes, which keep their shape when cooked. For speed, use a food processor to grate the potatoes.
