Perfectly Easy Dinner Rolls

1 cup warm water (105F to 115F) 2 packages active dry yeast 1/2 cup (1 stick) butter, melted 1/2 cup sugar 3 eggs 1 teaspoon salt 4 to 4 1/2 cups unbleached all-purpose flour Additional melted butter for brushing (optional)
Your family will love from-scratch dinner rolls; you’ll love the no-fuss preparation! They’re even easier if you make and refrigerate the dough a day or two ahead of time.
1. Combine the warm water and yeast in a large bowl. Let the mixture stand until foamy, about 5 minutes.
2. Stir in the butter, sugar, eggs and salt. Beat in the flour, 1 cup at a time, until the dough is too stiff to mix (some flour may not be needed). Cover and refrigerate 2 hours or up to 4 days.
3. Grease a 13x9-inch baking pan. Turn the chilled dough out onto a lightly floured board and divide into 24 equal pieces. Roll each piece into a smooth round ball and place in even rows in the prepared pan. Cover and let the dough balls rise until doubled in volume, about 1 hour.
4. Preheat the oven to 375F. Bake the rolls until golden brown, 15 to 20 minutes. Brush the warm rolls with melted butter if you like. Break the rolls apart and serve immediately.
Tip Before adding the yeast mixture, use an instant-read thermometer to check the temperature of the water.
